For this issue, I teamed up with Chef Sean
THE A UTUMN Kats to create 50 tantalizing recipes that
Patrick Gallagher and Assistant Chef Garri
will grow your food dreams while fueling
your body‘s desires.
Although many of us have been cooking
at home now more than ever, I never
tire of reading, learning, and trying new
APPE TITE recipes in my kitchen. Because the fall
season yields such a massive bounty, it’s a
great time to salute Mother Earth and her
offerings by creating savory and satisfying
dishes that warm both your heart and
your home. All the recipes included here
Fall back into a homemade routine. are elevated enough to serve at your next
Recipes by Chef Sean Patrick Gallagher dinner party and easy enough so you won’t
have preparation anxiety in the kitchen. I
present them to you believing that they’re
capable of taking you and your results to
the next level.
Personally, I lean toward dairy-free
veggie-based dishes, but if that’s not your
preference, look toward the seafood and
chicken/turkey recipes. We experimented
with a lot of interesting nontraditional
ingredients that many home cooks are
not familiar with but can easily find—yuzu
juice, harissa, Calabrian chilies, to name
a few. Remember, the fun thing about
healthy cooking is that you can create
health-conscious dishes that are bursting
with flavor by using spices, herbs, citrus,
and chilies.
Note: It’s okay to be both a chef and a guest
at your own fall holiday table or weeknight
cooking celebration!

honey olive oil cake with oranges and thyme.
When baking, the house smells delightful, and
you’re treated to a sensory overload. It’s difficult
to let the cake cool, but I always make an herbal
